I’m sorry I have been absent from the blog, my mom is here and I’m trying to enjoy my time with her. We’ve been playing tourists around Northwest Indiana, you can check Instagram for some pictures of our day trip to Shipshewana. Today I wanted to share my favourite flan recipe, a very easy to make dessert that everyone will love!

Ingredients:

- 2 cans of condensed milk

- 2 cans of milk

- 5 eggs

Directions:

- Mix the condensed milk with the milk. Use the same can of condensed milk to measure the amount of milk required.

- Mix the eggs in a different bowl and then add to the milk mix.

- Make some caramel and put it in a baking pan. To make caramel I put sugar in a pan and move it around the pan till is melted. Making caramel can be hard and messy so do not leave it alone! You gotta whisk it constantly!

- Once the caramel is in the baking pan, you can add the flan mix.

- Bake at 350f for 50 minutes in Bain Marie, which means that you need a bigger baking pan to fill with water! Once it is slightly brown on top and a toothpick comes out clean… it is ready to devour!

Tip: I love serving it with Whipped cream… and dulce de leche! :)

I’ve been wanting to bake Blueberry muffins for the longest time. But I wrongly assumed that mine would never be as good as the ones at the bakeries. Oh my, was I wrong! This delicious, and really easy to make!, muffins are definitely worth trying…

Ingredients:
- 1/2 cup of butter
- 1 cup of sugar
- 2 eggs
- 1 tsp vanilla essence
- 2 tsp baking powder
- 1/4 tsp salt
- 2 cups of flour
- 1/2 cup of milk
- 2 1/2 cups of blueberries

Directions:
- Heat the oven to 375º.
- Spray PAM (or butter) in muffin tin. Note to self: Next time use parchment paper cups!
- Mix butter until creamy and add sugar. Once it is fluffy, add eggs, vanilla, baking powder and salt. Add flour and milk into mix.
- Fold in blueberries and spoon into muffin cups.
- Bake for 20 min, until toothpick comes out clean.
- Sprinkle powdered sugar on top of them… and devour them all!

After mixing a banana bread completely by hand, I decided to splurge and get the coveted Kitchen Aid! The amount of different colors stole my thoughts for a whole week. Should I get the Watermelon or the Pistachio green? Maybe the cornflower blue it’s better… or yellow… or lavander?! And then I saw the Bayleaf green and decided we were meant to be together! Then it arrived.. and I fell in love! It is so beautiful and it works even better than I expected. Can’t wait to start baking with it… and maybe buy the ice cream attachment :D

banana bread with chocolate chips recipe

Last weekend I baked a Banana bread with chocolate chips that turned out amazing! And the best part is… it was the first time I used a bundt pan, and the cake came out perfect! Nothing was left inside nor it break while removing it. It may sound like a super silly thing to be proud of, but I am! :) My mom says that adding chocolate chips to a banana bread is kinda weird… but I believe it is impossible to ruin something by adding chocolate chips! And the extra added flavor is just perfect. I found this recipe in last month’s Northwest living but I changed a few things :)

Ingredients:

- 1 cup of butter

- 1/2 cup of buttermilk

- 3 eggs

- 1/3 cup of brown sugar

- 2 1/4 cup of sugar

-1tsp of salt

- 1tsp of baking soda

- 1tsp of baking powder

- 5 mashed bananas

- 2tsp vanilla

- 3 cups of flour

- 1 cup of chocolate chips

Directions:

- Let the butter, buttermilk and eggs stand at room temperature. Butter a Bundt pan and mix brown sugar with 1/4 cup of butter.

- Beat 3/4 cup of butter and add sugar until is fluffy. Add salt, baking soda, baking powder and eggs. Beat well after each egg. Add mashed bananas and vanilla. Keep on beating. Alternately add flour and buttermilk until everything is combined.

- Add the chocolate chips and butter and brown sugar mix, and mix them with a fork.

- Fill the Bundt pan and bake at 325º(f) for around 70 minutes. Let it cool for a few minutes and remove from the pan :) Once it was at room temperature, I decided to sprinkle some powderer sugar on top.

Apple pie recipe

Yesterday, I finally had a few minutes to put together a super yummy apple pie! As the container from Austria did not arrive at our new home in Indiana, I had to manage and bake it with the few things we own. Hence the weird shape of what was supposed to be a round pie crust. I also baked a banana bread… that was so good I totally forgot to take a picture of it! (Ooops!) Will share it the next time I bake it :) I tried to keep this apple pie recipe as simple as possible…

Ingredients:

-Pillsbury Pie crust

- 6 thinly sliced apples

- 1/2 cup of sugar

- 2 tbsp of flour

- 1/4 tsp of salt

- 1 tbsp of lemon juice

Directions:

- As easy as mix the ingredients and put them inside your pie! :D Bake your pie for 45 minutes at 420F and let it rest for an hour before eating.

- I would recommend sprinkling a little bit of sugar on the pie, and don’t forget to cover the edges with aluminum foil after 18min of baking.

- You can also bake this dish without the pie crust, add 2 extra tbsp of flour and serve it with vanilla ice-cream. Sadly it is too cold in Indiana to even consider this last option :S

As I was moving, and had to finish my (super expensive and impossible to find in Austria!) box of Bisquick, I checked Pinterest for some inpiration! There are so many delicious recipes, but I did not have that much left… so I decided to adapt a Bacon pancake bite recipe. Here is the yummiest bacon muffins recipe:

Ingredients:

- 1 cup of Bisquick

-1/2 cup of milk

- 1 egg

- 4 bacon slices

- 1/4 cup of cheddar cheese

Directions:

Heat oven to 350°F. Butter a muffin tray.

- In large bowl, stir together Bisquick, milk and egg. Add bacon and cheese; stir just until combined. Pour batter evenly into mini muffin cups, filling nearly to the top of each cup.

- Bake 10 to 15 minutes or until tops are light golden brown.

- Optional: I served them with Philadelphia cream cheese, butter, tomatoes and basil!

One of my favorite desserts is rice pudding… I love it so much that I do not consider it a dessert, but a meal! And that’s why I try not to make it too often! After trying many different rice pudding recipes… this is my favorite one:

Ingredients:

- 1l of milk

- 1/3 cup of sugar

- 1 cup of rice (I prefer the cheapest one)

- Optional: You can add cinnamon sugar, nutmeg or vanilla essence.

Directions:

- Boil the milk and cook the rice on it.

- Add the sugar and keep on mixing until the texture is as desired.

- If the rice soaks all the milk, you can keep on adding more :)

- Once it’s almost done, you can add an optional ingredient!

Let me know if you come up with another ingredient! I love trying new versions of rice pudding!

Corn quiche

Corn quiche

One of my favorite dishes to make is corn quiche. The recipe is based on one my grandma gave me, which I modified a little bit to make my own version of it. Of course, I buy a pre-made dough… otherwise this would take year’s to make!

Ingredients:

- 1 liter of milk

- 3tbsp of flour

- 1 tbsp of starch

- 2tsp of sugar

- 1tsp of salt

- 1 chopped Onion

- 2 cups of shredded mozzarella cheese

- 1 can of corn

Directions:

- Heat the milk at low temperature and add the flour. Mix until it gets hard… if it is too soft, add more flour or starch, if it is too hard, you can add a little bit more milk.

- Add the sugar and salt, and keep on mixing.

- Once the mix is ready, add corn, cheese and onion.

Tip: To decorate the quiche, I love getting an extra dough and using a cookie cutter to make it themed and fun!

best hot chocolate recipe

After baking these chocolate cookies for the Tchibo BlogParade, I decided that the best way to eat them would be with a super yummy cup of hot chocolate! So I will share with you what I think it’s the best hot chocolate recipe eveeeer! :)

Ingredients:

- 1/3 cup Cocoa

- 1/2 cup sugar

- 1/3 cup boiling water

- 3 1/2 cups of milk

-3/4 tsp vanilla essence

- pinch of salt

- Use two saucepans. One is to boil water, and the other one will be first used as a bowl to mix the dry ingredients (sugar, cocoa and salt).

- Add 1/3 cup of boiling water to the dry mix. And turn on the heat, till everything is combined. Once it is starting to boil, you can turn off the heat and keep on stirring while adding the milk.

- Turn on the heat, but do not let it boil!. Add the vanilla essence and a cute candy cane!

A few weeks ago, I was contacted by Tchibo to be part of their “X-mas baking” Blogparade. Of course, I inmediately said yes! I love the brand, and every week they come up with the cutest things… mostly during holiday season when their baking accessories are just adorable. Last easter I bought some egg molds with bunny and heart shapes! And this christmas they will have a silicone mold to bake cakes in the shape of… a village! How cute is that?! But I decided to pick the Gingerbread family cookie cutters, with a lovely mom that my husband says looks just like me (hair and bow maybe?) and a dog, to make… lemon cookies! With the Blogparade baking set I also received a sugar decoration set, pastry brushes and 2 cookie boxes, perfect to store my baked goodies and keep them fresh for days! These items will be available at all Tchibo stores around Nov. 19th :). In the meantime, here is the recipe I picked for Tchibo Blogparade:

Chocolate honey cookies

Ingredients:

- 500g flour

- 250g butter

- 2 tsp baking soda

- 60g cacao

- 70cc water

- 210g brown sugar

- 70g honey

Directions:

- Mix water, honey and sugar in a bowl and cook it with Bain-Marie till the sugar is melted.

- Add butter and baking soda and keep on mixing until it is all incorporated.

- Remove from the Bain-Marie and put it on the mixer till it is cold.

- Add flour and cacao.

- Let the mix rest in the fridge for 4 hours.

- Cut the cookies and wrap them with baking paper.

- Let them rest in the freezer for 4 hours.

- Bake at 160º C between 8-12 minutes.

- Decorate!!!

For the icing I used this Royal Icing recipe, but without lemon, as I did not think it would work with the chocolate and honey flavor.
